Soybeans are usually classified by their crude protein content.
The high-protein varieties are obtained from the hulled seeds and contain 47-49% protein and 3% crude fiber (as a dietary basis). Other types of soybean flour include the hulls or part of the hulls and contain less than 47% protein and more than 6% crude fibre. In solvent-extracted soybean meal, the oil content is typically less than 2% while in mechanically extracted meal it exceeds 3%.
